The pie is in the oven and I'm getting ready to flatten the chicken breasts and fry them up for a really beautiful crust made from panko crumbs. If you've never used Panko crumbs - oh, you must do so immediately! The unique crust that it lends whatever you are baking or frying is simply divine. It's so crusty and crunchy. I'll slice those breasts up and lay them on top of the salad with bacon slices, croutons, boiled eggs and cheese and that will make a fine salad for lunch.
I've put back out all the deck pillows and umbrella and I've gotten dressed!! Yes!! I hadn't even gotten out of my jammies yet but finally, teeth brushed, hair combed, make-up on and I'm as ready as I'll ever be!! I know for some of you this is such a silly thing to try and get so prepared for company. But . . . why have company if you can't enjoy them. I want company to feel comfortable and welcomed and then they can enjoy my company as well. I don't like to be cooking the entire time they are here or running around putting this there and that here. I like it as prepared and finished as possible and then I can sit down with them and talk or walk or do anything they'd like to do.
The air is crisp, it's windy but the sun is bright and shining today. Now THIS is a perfect Spring Day!! The birds are singing everywhere and all is well.

Our company got here safe and sound and it was wonderful to see them again. We walked all over the place and they had to check out the vegetable and herb garden. My brother and I walked over to my grape arbor and he explained to me how to prune it back properly. He told me I really should have done it, oh, probably a week or more ago because it already had buds on it, but that it wasn't in too bad of shape that it couldn't last for pruning until next Spring. He said I would probably be okay to prune it about the same time I cut the roses back. Knowing that, I will be sure to keep that information in my head. Trimming the roses back is always important to me so I know it's something I won't forget.
My company seemed to enjoy the salad for lunch but they LOVED the pizza I had for supper. My brother had three pieces and they weren't tiny either. He really like it!! This was so good to know. My husband had said it was good and had been bragging on me but I hadn't fixed it for anyone but him and he really does try not to be too hard on me when I'm fixing a new recipe. This was only the 3rd time I had fixed it and there wasn't a piece left to save, throw away or feed the dog.
Everyone has decided that tomorrow we should only have 2 meals cause we're all getting old and can't eat like we used to. WHAT A BUNCH OF WIMPS!!!!!
