I fixed Chicken Broccoli Lasagna using a Taste of Home recipe last night and we also had it as leftovers for lunch today. Personally, I think it tasted great but . . . it was definitely not a quickie put-together. It wasn't super terrible, but I laugh at how many pots and pans I used. Of course, I wouldn't be happy unless I used as many ingredients as I could that I had grown and canned myself, and that probably added to some of the mess. I grated from blocks of cheese instead of buying shredded, I used my own canned chicken, cleaned and grated my own fresh carrots, used frozen chopped onions from my garden, my frozen chopped broccoli, used my own garlic cloves, parsley and chicken broth. But still, it was kind of spread out EVERYWHERE! You need to make a white creamy sauce first, then put together the body of it mixing the chicken, broccoli, etc., and of course, you have to boil up your lasagna. It just created quite the mess. But I did it and it was something I'd not fixed before!!! and it WAS good!! (Recipe on Recipes page.) I was out the door to go check on my chickens pronto this morning, all the time trying to build up the mental strength to see what I would have to see if something managed to get into the chicken coop last night. Luckily there were 8 healthy happy chickens clucking away. I've been keeping my eye out for any critters outside today. No sign of anything so far.
