Anyway, I will be ever-so-slowly transferring all of my recipes to a spreadsheet so that you can at least look them up alphabetically. I'm actually thrilled but hesitant. I'll get it to you eventually!
I'm being called into work a lot here lately and it really messes up my days big-time. I was getting less hours which was very much to my liking and I had started getting my act back together here at home and then . . . boom, they started calling me into work again. I'll get used to it, I'm sure, but not being in a routine after all these years has really been difficult for me. Again "CHANGE"!!
Yesterday I took some beef out of the freezer to thaw and am planning on canning it up today. We're looking at getting a little more beef for the freezer and I've been wanting to preserve more in jars. This may sound silly to some people but if we were to go an extended period of time without electricity a lot of our meat would spoil since we do not have a generator to keep our freezer up and running. Also, canning the meat means we can eat it right from the jar with no added water or needing to have a heat source. It's very useful to have stocked back for emergency situations. Oh, and it is extremely handy to have around if I'm in a big hurry too!! I can put it in soups, stews, or use it for sandwiches. I'll bet at one time or another you have all gone to the store and bought tuna fish or chicken in a can, right? Well, I can chicken, pork, venison and beef in glass jars. Storing in glass is much better than cans! Try it. It's terrific!!
I have some leftover oranges, grapefruit and lemons from Christmas in the frig which need to be used so I think I will juice them up and can them too. Then I'm going to take the peelings and put them in white vinegar for use later as a cleaner since they are not organic. (I save the organic peelings for teas!) It's going to be a very busy day!!
