Went to church at 9:30 and was home by 10:30. Afterwards while Hubby and I were sitting out on the deck I moaned about how I really wanted to get the carrots put up. It couldn’t be that hard!! So we just got up, changed clothes, went out to the garden and dug them. We had, oh, just about a bushel of carrots. Had no idea we had planted that many. Usually our carrots are not very good but this year we had several!! While hubby washed the ones I was going to can, I packaged the very best of the carrots into 6 bags and put them in the refrigerator drawer. I then made a meatloaf and some green beans and potatoes for us to eat later, and . . . other than sitting down for 20 minutes and gulping down that meal, I found myself at about 4:00 p.m. thoroughly worn out and frustrated. I had gotten down to the very last of the carrots, the little ones that are a lot of trouble and I had finally had enough!!! I know it sounds silly but I was so tired I could have cried. I really am disappointed in myself but friends, the horses truly enjoyed the rest of those carrots!! I was so wound up tight yesterday evening I like to never went to sleep last night but woke up this morning not feeling to awfully bad. I’ve on rare occasions reached my maximum output but yesterday I was there and you couldn’t have begged me to clean anymore carrots!!!
I had to work at the office today so I got up and filled my crockpot with beef, fresh herbs and veggies. I’m going to make a big pot of vegetable soup this evening. It is my intent to not only have enough for our supper and lunch tomorrow but enough for a canner full of soup. Last year I canned several quarts of vegetable soup and nothing, and I do mean nothing, was as handy to have around on a cold wintry evening when I was too tired to move!! This year I want to get at least a dozen quarts put up. I’ve got beef broth, veggie broth and chicken broth ready for making tomato soup, beef ‘n barley and chicken noodle but vegetable soup is simply a reheater and handy as a hind pocket.
I'm looking forward to getting out of the vegetable garden and back into my herb garden!!! I'm pretty much "fried" when it comes to canning!!
Meanwhile, life goes on at a hop-skip-and-a-jump!!!
