The potatoes were much more of a pain to can than I imagined and it may be that I was just not in the mood. After you've spent the Summer canning, the last thing you really want to do is can through the Fall. I realize I always have pears and carrots to can but this canning potatoes is somewhat new and a giant pain. It's going to be worth it though. No more store-bought sliced potatoes!!! Once they're peeled it's not a big deal but oh my gosh, I do hate peeling potatoes, especially when they are the culls of the bunch. They are crooked, notched, tiny, some bug eaten and just totally irritating, but still usable after you go to all the trouble peeling and cleaning them!! It is a good way to use the culls. I ended up with 6 quarts whole new baby potatoes and 6 quarts sliced potatoes, along with a 2 quart bowl of sliced potatoes to fry for Hubby. His one request in digging the potatoes yesterday is that he wanted some potatoes fried up good and crispy. He deserves that and is going to get them on Saturday.
I've done a couple loads of laundry and have not finished laundry yet but I have to stop take a shower and get ready. Hubby is taking me out to dinner!!!! Talk to you all tomorrow!
