I put the raspberries in the freezer and canned the beets. There were 4 pints of pickled beets and 3 pints of beets and greens. Has anybody canned beet greens? I found a recipe online and followed the times for canning but other than that - I did it my way!! Sounds like a song, huh? LOL!! First I cut out the veins and cut off the stems, then piled them up on top of each other and sliced them in 1-inch widths and left the length. I steamed them. Then I put a few small beets in the bottom of the jar and filled it 3/4 of the way with the beet greens and topped them off with another handful of beets and 1 teaspoon of salt. The recipe I found said to pressure can them for 70 minutes while the pickled beets only needed 30. I just left them all in the pressure cooker for 70 minutes. They always say over processing is preferable to under processing! Well, we'll see about that, but they surely are pretty.
Tomorrow I have planned a whole day for the herb garden and I am so looking forward to it. The only thing I have left to do today that's on my list is making a tincture or two and that may not even happen. I'm tired. Talk to you all tomorrow.
