I scrambled up a couple eggs for us this morning. We don't generally eat eggs that often but when I'm feeling extra bright and cheerful one never knows what I'll fix for a meal. I got out some hot sauce and yum!!! Also, I had put beef in the crockpot yesterday and last night we did indeed have beef, mashed potatoes, gravy and green beans, not too imaginative but I was tired. Today I'll take that leftover beef and I'm turning it into some awesome vegetable soup. Not awesome cause I'm such a good cook, mind you, just awesome because vegetable soup is one of my favorites!!

Well, got a little carried away with the vegetable soup and made enough to can up 8 quarts and still have at least 4 quarts left for supper. I thought a full canner of soup was a lot and then I remembered I hadn't put in potatoes. Geez!!! A little more than anticipated. It was pretty good stuff though. Everything in it came from our garden, except for the beef which we bought from a farmer, the peas and celery, and I'm going to fix that this coming Spring. We're going to try to plant green peas one more time. We've never had too much luck with peas but never say never!! I've also seen online a way to raise celery. I'll get back to you on that. I'm going to check it out before I put myself out there on this one! But, even if that is a failure, lovage is an herb that tastes like celery so for soups this could replace celery with no problem. There's something about being able to grow from my garden a full meal - that just turns my crank!! I know that you're never completely secure but it gives me a little security knowing that at least, if I had to, I can do this sort of thing.
