Hubby and I both had to work today and neither of us felt like going in. I hate to admit it but after a Winter’s lull it takes some time to build one’s physical stamina back up. It takes me about 2 weeks to get leveled off and I’m not there yet. I thought I would wake up and bounce right out of that bed but, even though I felt a little more rested, I was still tired this morning. I knew I would be - it was just wishful thinking. I just need to keep pushing myself a little every day and by the end of the next couple weeks I’ll feel much better.
I went out in the herb garden last night after dinner while the cake I had just baked was cooling and before I knew it I was down weeding some herbs and 8:00 p.m. was here before I knew it. I came in the house and made some chocolate icing and iced the cake. Hubby was ecstatic!! To be honest, that’s about all I did last night. We sat out on the deck and watched the Purple Martins flying high and gazed at the lake for a little while and that was about it.
Tonight I’m trying a new recipe for dinner - Cauliflower with Parmesan Cheese and Pancetta. Not many people like cauliflower unless it’s covered with creamy lemon cheese sauce but I’m not one of them. I love it and I’m trying to find a few new recipes. I just don’t have many recipes for cauliflower. As soon as I mention cauliflower people’s noses immediately start to turn up. If I could just find one more really good one!!! Any of you got one? I’d be interested!!
Well, I tried the Cauliflower with Parmesan Cheese and Pancetta and it was really good, but it was so fattening!! It's not something I would want to eat as a main dish either, though that's how we ate it. It would be perfect with grilled T-Bone or Rib-eyes but again, I caution you, very caloric. I'm getting ready to fix myself a cup of tea and walk out to the herb garden and have a rest on my herb garden bench. I need to think. I'm trying to decide the perfect meals to fix for this week-end. My brother and his wife are coming and they LOVE to eat. It is so much fun to prepare food for people who really appreciate eating!!
